Slow Cooked Beef Brisket Ragu
For this dish have teamed up with Chef Ariel Manuel, the multi award winning chef of Lolo Dad's fame. He is now at Bistro Manuel cooking up a storm and bringing his usual cooking style of in-your-face rich falvours.
Oven braised beef oyster blade (kalitran) for 4 1/2 hours. This part of the beef is a rich combination of meat and tendon that gives a nice texture in the mouth. Mirepoix (carrots, onionleeks, onion and celery), whole peeled tomatoes mixed in with a reduction of cabernet wine and balsamic vinegar.
