For this dish have teamed up with Chef Ariel Manuel, the multi award winning chef of Lolo Dad's fame. He is now at Bistro Manuel cooking up a storm and bringing his usual cooking style of in-your-face rich falvours.
Sundried tomatoes soaked in white wine to balance the sweetness and acidity. Feta cheese and olive oil provides a smooth, creamy texture. Topped with confit tomatoes and garlic, with freshly grated parmesan and basil.
